Tofu & Savoury Koji Carbonara

Hello. We have been lucky with sunny and warm weather here in Surrey, UK. In our small garden lots of flower have started blooming, and it might be the best time of the year. To be honest, I’m not good at looking after a garden nor is my husband.  Since it would have been so sad to lose all the flowers and plants planted by the previous owner (apparently the lady was a professional garden designer), we asked for help from a gardener. He does a brilliant job and keeps our garden nice and tidy:)  Maybe we should start to learn ourselves….

Today I’d like to give you my special recipe of Tofu and Savoury Koji Carbonara, which is one of my boys’ favourites! As no egg or cream is used, it’s healthy and low calorie, too. I usually use bacon, but if you are vegetarian, you can easily swap the bacon with shiitake or oyster mushrooms. As Savoury Koji adds lots of Umami, you don’t need to add anything else. It’s so easy, fast and tasty!

 
 

Tofu & Savoury Koji Carbonara

serves 3-4
prep time:10 minutes + time to boil spaghetti

Ingredients
A small block of silken Tofu
3 tbs of Savoury(Shio)  Koji (adjust according to your taste)
1-2 cloves of garlic
30cc or more of soy milk  (depends on the water content in Tofu)
a few slices of bacon, chopped
100g of spinach leaves, roughly chopped if they are big
Olive oil
Spaghetti
Grated cheese (optional)

Vegetarian Option
Swap bacon with 100g of Shiitake or Oyster mushrooms roughly chopped

1. Put savoury koji, tofu, garlic and some soy milk in a food processor and run it till smooth and it becomes thick cream consistency. Adjust the amount of soy milk accordingly.
2. Heat some olive oil in a frying pan and sauté the bacon well till the edges become nicely brown. Add oyster or shiitake mushrooms if you are using them, then spinach, and keep frying until the spinach gets cooked (it takes about two minutes or so). Add tofu mixture, mix and heat it up.
3. Cook the spaghetti and mix it with the sauce. Put lots of cheese on top (optional). Serve and eat while hot.  I love this pasta, it is healthy and really tasty, with a creamy taste without any cream!
